Cola Cupcakes.

Whenever I am feeling bored / upset, I always find taking my mind off things making lovely treats makes me feel better. So whilst feeling a bit low the other week I decided to make Cola Cupcakes. They were definitely worth the experiment.

What I used:

Cake

  • 200g Unsalted butter.
  • 200ml cola (cheaper the better)
  • 250g Self raising flour
  • 1tsp baking powder
  • 1tbsp cocoa powder
  • 200g Caster Sugar
  • 2 beaten eggs
  • 150ml milk

Icing

  • 100g Unsalted Butter
  • 25g cocoa powder
  • 450g Icing Sugar
  • 100ml Cola
  • 1tsp Vanilla Extract
  • Cola sweets.

Step 1:

Preheat the oven to 200°c  and place your cupcake cases in a cake tin. In a saucepan heat up the butter and cola until melted. Remove from the heat and allow to cool.

Step 2:

Sift the flour, cocoa powder and baking powder into a separate bowl. Add the cooled cola butter mixture, sugar and eggs and mix together until smooth.

Step 3:

Divide the mixture between cupcake cases and bake for 25-30 minutes. (A handy tip to see if your cake is cool is to pierce the middle of the cake with a sharp knife / skewer and see if it comes out clean.)

Step 4:

My boy’s favorite bit…making the icing. Cream the butter in a bowl. Gradually sift in the icing sugar and cocoa powder until all mixed in. Add the cola and vanilla extract and beat until smooth. If the mixture is still too stiff, add a little bit more cola.

Step 5:

Pipe the icing onto the cooled cupcake, and add your cola sweets on top. Share with friends and let the compliments roll in.
